Happy Friday/Just The Tip day, friends! Let’s talk cauliflower “rice.”

Cauliflower “rice”—aka cauliflower florets that have been broken down into rice-like granules—has been cool for a while now, and I’m pretty sure it’s here to stay. As far as food trends go, it seems to have the staying power of chia seeds, which in my mind gives it serious street cred. Especially since Gwyneth and Beyoncé gave chia a big boost and cauli rice got famous all on its own. (With that said, Gwyneth is coming out with a new cookbook. It would be just like her to take credit for cauliflower rice…but that’s a subject for another time.)

Anyhoo, I’m particularly pumped to show you how to make it in today’s episode because I eat this stuff at least once a week. It takes all of 10 minutes to whip up, it’s packed with nutrients, and the flavoring possibilities are gloriously infinite. Even my roommate loves it. So without further ado…
