Happiest of #JustTheTip days, friends!!

There were a lot of things that I wanted to say about today’s very important fish-cooking episode. I truly believe that the en papillote (translation: in parchment) method is one of the most magical cooking hacks of all time, and I had planned to run through the selling points of this super simple (yet surprisingly elegant!) technique, maybe share the story of “fish package” day at Le Cordon Bleu, and provide you with endless you do you recipe suggestions. But I just can’t even right now because MY ROOMMATE ASKED ME TO MARRY HIM ON WEDNESDAY, and my brain feels mushy, and I can’t seem to string coherent sentences together about fish.

Instead, I’m just going to say (as I sit here amongst 200 yellow and gold balloons—thanks, Dad), HI! I’ve got a permanent roommate now! Thank you to all who showered me with so much love on my token Insta engagement post! I’m freaking out a little, but I could not be any more surprised/elated, and I can’t wait to tell you about the hilarious Etsy photo blanket that the Dude popped the question on! EXCLAMATION POINTS. (I’m sweating a little.)

Oh, and please watch the goddamn fish video. It’s a good one.

p.s. The shirt I’m wearing in this vid just happens to be the same one I was wearing when Logan proposed.

p.p.s The fact that I’m demonstrating a classic French technique is rather apt, since Logan is taking me to PARIS today. Because that’s where we met, and he is romantic AF.

p.p.p.s. I scheduled this particular Just The Tip weeks ago, and given the above, I feel rather intuitive? It’s like I have ESPN or something…

        Following-up on the recipe here–thinking of doing a fish en papillote for a date-like situation this weekend (will make me look like a much fancier cook than I am; plus I can say “en papillote” and look classy AF), any recommendations for a winter/more seasonally appropriate fish/veggie combo???

          OOOOH, excellent date-like dinner call! Winter veggies are a little bit tougher en papillote, but you could do some onions and cubed or thinly sliced butternut squash (if you cube, go for 1/4-inch cubes so they’ll cook through). You could also do some cauliflower or broccoli florets–just slice them thinly or chop them into relatively small pieces. Alternatively, you could cook the fish in parchment with lemon and herbs and cook some Brussels sprouts and/or some roasted potatoes on the side?
