*If you want cakes that are more moist, and you don't mind the added fat and cals, replace the apple sauce and coconut oil with ½ cup (1 stick) unsalted butter at room temperature. If you choose to do this, cream the butter and sugar together with a stand mixer or electric hand mixer. Then beat in the eggs and vanilla.
